Pancake Tuesday is upon us again and who doesn’t love a Pancake?

Although you can buy pancake mixture in most supermarkets, home-made pancakes can be made using only 3 or 4 ingredients, and the result is far tastier!  So we've put together our pancake recipe with lots of topping ideas just for you!  And the great thing about pancakes is that kids love making them and it is so easy for them to mix the batter.  Obviously with a little parental help with the frying pan, but tossing the pancake generates some hilarious results in our household as well!

Pancake Recipe

1 cup plain flour
Pinch of salt
1 egg
¾ cup milk
Water

Sift flour and salt into a bowl.  Add egg, mixing to combine.  Gradually beat in milk, mixing to a smooth batter.  Chill for one hour.  Stir.  The batter will thicken on standing, add a little water if necessary to bring it back to the original consistency.  Heat a greased pancake pan or small frying pan.  Pour in just enough batter to cover base of pan.  Cook until golden on underside, then flip and cook other side.

• Toffee Sauce & Whipped Cream
• Strawberries & Whipped Cream

Or you can try rolling pancakes with cooked meats, melted cheese, and roasted or stir fried vegetables for a healthy savoury treat.
